THE FIRST DATE
Todd and Heather’s first date began at Good Luck but not before a little excitement at home.
Todd arrived to pick Heather up to a kitchen that was very close to going up in flames. In a last-minute attempt to tidy up before he arrived, Heather had put the children’s Paw Patrol and Princess placemats into the oven while preheating it for a quick pizza after Todd mentioned he might want a snack and a cocktail before heading out.
Nervous, distracted, and focused on getting dressed for a first date, Heather completely forgot about the pizza and the placemats altogether.
When Todd arrived, he walked straight into the chaos and somehow managed to take it all in stride. Instead of panicking, he calmly saved the day and pulled out flowers not just for Heather, but for the girls too. In that moment, Heather knew Todd could navigate a busy lifestyle with ease and grace.
That night, they shared a tomahawk steak at Good Luck, where Todd learned two important things. Heather could absolutely keep up with his very healthy appetite, and she could keep up with him. Conversation flowed easily, laughter came naturally, and somewhere between bites and stories, they realized they were two peas in a pod. By the end of the night, it was clear this first date was anything but ordinary.
THE PROPOSAL
Heather’s Point of View
Todd proposed to me in Bachelor Gulch, nestled in the heart of Beaver Creek, Colorado, surrounded by softly falling snow that seemed to sparkle under the mountain lights.
On the evening of February 13th, 2025, Todd suggested cocktails at the stunning Ritz-Carlton. As always, he effortlessly lit up the room with his conversation. His confidence and poise have a way of drawing people in, and even after all this time, I still find myself mesmerized by him. It felt like any perfect date night, laughing, talking, soaking in each other’s company. One of my favorite things about date nights with Todd is that we almost always leave having made new friends.
So when he suddenly suggested we step outside for a walk, I found it a little unexpected. We hadn’t even made new friends yet… but the view was breathtaking, and I happily went along.
Wrapped in the glow of the snow-covered mountains, I remember thinking that I had never loved him more than I did in that moment.
And then… he dropped to one knee.
I could tell he was nervous. Somehow, that made me nervous for him. As he was proposing, completely out of nowhere, I suddenly realized a photographer had snuck out from behind the bushes. I couldn’t believe he had planned something so magical. I was so impressed by the thought, the effort, and the intention behind it all.
But the truth is, I already knew Todd was my person. This was never a question for me. This beautiful, perfectly planned moment was just the bonus.
Then he asked me to marry him.
I don’t think he even finished his sentence before I said yes.
Todd’s Point of View
I remember the anticipation being all-consuming.
Over the course of my life, I’ve found success navigating pressure, and having the ability to use words to my advantage.
But in this moment, wanting to create the most memorable experience for the person I love most left me completely still.
Don’t get me wrong, I was prepared. The ring in my pocket, the perfect spot waiting for us, the words I had whispered to myself over and over, a photographer hidden just out of sight, champagne resting in the snow, and an outfit that mirrored hers. Thankfully, I had packed white.
I’ve watched Heather so often, creating special moments for the people she loves and the things she’s passionate about, that I wanted to give her a moment she would carry with her forever. I wanted her to feel seen, adored, and celebrated in every detail of the evening, a reflection of the way she touches the lives of everyone around her.
We arrived at dinner, and suddenly the world felt smaller, quieter, just us two. The plan was in motion, and I could barely breathe. The Ritz-Carlton at Beaver Creek, Colorado overlooks a steep mountain valley called Bachelor Gulch, a perfectly fitting place to say goodbye to being a bachelor and begin a lifetime with Heather.
Problem, Heather is a sunflower, constantly seeking sunshine, and warmth. After a few sips of champagne and taking in the breathtaking view from the restaurant, convincing her to go for a walk outside required every ounce of my charm.
I can still feel taking her hand and looking at her, knowing she’d understand everything without me having to say more: “It will all make sense soon.”
People often ask me, “When you made it outside, around the bend, onto the snowy bridge, and down on one knee, what did you say?” My answer has been, and will always be, “I don’t remember.” What I do remember is her, her smile, her eyes, and the happiness and peace behind her “YES”.

The ambiance is intimate and refined, matched by a Brazilian steakhouse–style menu highlighting premium grilled meats, fresh seafood, and elevated Mexican flavors. It is widely regarded as one of the resort’s most distinctive and memorable culinary venues.
Review: Words cannot begin to describe how much we love Las Cuevas. I’m already counting down the days until we can dine here again. The meats were incredible, and the salad bar was outstanding. We ate here as often as we could and easily found ourselves here more than anywhere else.
MERCADO DE LA MERCED
A sensory trip curated by Chef Ricardo Muñoz Zurita, researcher and guardian of Mexican cuisine. Through its ten thematic stations you will enjoy the colors, textures and flavors of top-quality ingredients, which will be transformed in front of you into truly Mexican dishes. Assisted Buffet.
Review: This was one of our favorite breakfast spots during our trip to Hotel Xcaret. From fresh pastries and fruit to authentic Mexican breakfast dishes and classic American favorites, it truly had everything. And the mimosas! I still remember standing there, never quite knowing where to start.
FUEGO
Italian-Mexican proposal by Chef Franco Maddalozzo, exclusive to Casa Fuego guests.
Review: We enjoyed breakfast here several times… an absolute must for Fuego guests. The morning view is breathtaking, soft and serene, and the pastries are truly unforgettable. I had never seen anything like them and still find myself dreaming about them.
We also enjoyed dinner here, but with so many incredible dining options to explore, we found ourselves gravitating toward cuisines we don’t get to enjoy as often at home. Italian is a favorite of ours, but the excitement of this trip had us eager to try something new.
LA TRAJINERA
Restaurant with a beautiful ocean view, and the best land and sea products.
Review: This is a great spot for a Buffet Style light lunch, especially before or after a pool day. I found myself grabbing a bite here before heading to the pool, knowing the tequila shots Todd would inevitably be ordering were about to get the fun started. Just around the corner is an excellent pool bar, where some days we happily spent hours. I would even mosey my way over to Trajinera for snacks along the way.
Xin-GAO
Xin-Gao at Hotel Xcaret México offers a high-energy, upscale Asian dining experience featuring sushi and live chef cooking on open grills right at your table. Sleek design, engaging performances, and polished service make it feel more like a destination than a resort restaurant. It’s vibrant, stylish, and one of the resort’s most in-demand dinner reservations.
Review: We absolutely loved Xin-Gao—exceptional sushi and cocktails that were truly to die for!
CANTINA LOS FAROLES
Oaxacan cantina by Chef Alejandro Ruiz, with live music and a nightlife.
Review: While we didn’t eat here, the nightlife was fantastic. Live music, dancing, and great energy made this a go-to spot for us in the evenings. I have no doubt we’ll be back multiple nights during our trip.
Tuch De Luna
The colors of Mexican culture, the strong and contrasting flavors of our history and the velvety nuances of our country's well-known hospitality are enjoyed at Tuch de Luna, the new home of Chef Martha Ortiz, where the synesthesia of the moon's reflection on the sea comes through the restaurant's windows and illuminates a collection of dishes that the best Mexican Chef showcases as if they were paintings in an exhibition.
